Tomato Bisque

Tomato Bisque

  • 3 tablespoons butter
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons flour
  • 5 cups chicken stock
  • 3 cups fresh tomato, chopped
  • 3 parsley sprigs
  • 3 fresh thyme sprigs
  • 2 bay leaves
  • 1 cup heavy cream, warm
  • 3 Tablespoons sherry
  • Freshly ground black pepper

1. Melt butter, add onion, cook 3 minutes

2. Add garlic, cook 1 minute

3. Add flour, cook 3 minutes

4. Now Add hot chicken stock, celery, carrot, tomato

5. Put herbs into soup, slow boil 20 minutes

6. In small pan, heat cream and sherry

7. Pour cream into the soup, simmer 5 minutes
