Zucchini Boats

4 medium zucchini
1 small onion
1 tomato
1 bell pepper
1 cup cooked couscous
4 Tablespoons olive oil
½ teaspoon oregano
Salt & pepper
4 slices provolone

  1. Slice zucchini lengthwise, scoop out seeds
  2. Place in baking dish, add ½ cup water or broth
  3. In a medium bowl, toss couscous with veggies
  4. Add oil and seasonings, mix well
  5. Spoon into the boats
  6. Place a slice of provolone on each boat
  7. Cover with foil, bake 30 minutes

Tips: Place boats on sheet of foil, grill 20 minutes

Steam or saute veggies before adding to couscous
Leave zucchini whole, boil 10 minutes for quicker baking time
