Zesty Pickles


3lbs of cucumbers, kirby works best
1 1/2 cups apple cider vinegar
1 1/2 cups cold water
2 tablespoons kosher salt
8 garlic cloves, peeled
4 teaspoons dill seed
2 teaspoons black peppercorns
1 teaspoon red pepper flakes
4 pint jars

  1. Wash pickles, remove ends, let dry
  2. Boil vinegar, water and salt
  3. Divide garlic, dill, peppercorns, red pepper flakes and cucumbers into the jars
  4. Pour brine over pickles, leave ¼ inch headspace
  5. Place lids on jars, set jars into a pot of boiling water
  6. Medium boil for ten minutes
  7. Remove jars, let set for 10 minutes.
  8. Enjoy!
