Mussels Florentine

4 lbs of mussels

2 cups dry white wine

4 cloves garlic, minced

4 shallots, minced

1/3 cup fresh herbs, your choice

½ teaspoon salt

6 Tablespoons butter

2 lbs fresh baby spinach

  1. Wash & clean mussels
  2. In large pot, heat wine, garlic, shallots, salt
  3. Simmer 5 minutes
  4. Add mussels, bring to boil for 5 minutes
  5. Remove from heat, stir in herbs & butter
  6. Place spinach in bowls, 4 servings
  7.  Pour Mussels & broth over each bowl of spinach.
