Cranberry Kissed Muffins

½ cup plain yogurt
1 cup granulated sugar
3 large eggs
pinch salt
1 ½ cups all-purpose flour
2 tsp baking powder
1 1/2 tbsp lemon zest
1/2 tsp vanilla extract
½ butter
2 cups fresh cranberries

  1. Cream eggs, butter, salt.
  2. Add sugar.
  3. In bowl, mix flour and baking powder
  4. Add the butter mixture to flour.
  5. Fold in yogurt, lemon zest,vanilla.
  6. Batter should be thick and clumpy.
  7. Spoon in chopped cranberries.
  8. Bake in muffin tin at 350 for 18 mins.
