Cranberry Kissed Muffins
½ cup plain yogurt
1 cup granulated sugar
3 large eggs
pinch salt
1 ½ cups all-purpose flour
2 tsp baking powder
1 1/2 tbsp lemon zest
1/2 tsp vanilla extract
½ butter
2 cups fresh cranberries
- Cream eggs, butter, salt.
- Add sugar.
- In bowl, mix flour and baking powder
- Add the butter mixture to flour.
- Fold in yogurt, lemon zest,vanilla.
- Batter should be thick and clumpy.
- Spoon in chopped cranberries.
- Bake in muffin tin at 350 for 18 mins.
