Portobella Mushrooms Stuffed

 Portabella Stuffed with Veggies

2 Large portabella mushrooms

1 cup steamed spinach

1 cup mixed veggies, carrots, zucchini, broccoli

1 cup vegetable broth

 

  1. Remove stem from mushroom
  2. Steam or sauté veggies, or use leftovers
  3. Spoon half the spinach into each mushroom
  4. Pile on veggies
  5. Pour broth in baking dish
  6. Cover with foil, bake at 350 for 30 minutes.
