Boys & Collards

2 bunches fresh collard greens, ribs removed, cut into strips, washed well
1 Tablespoon sea salt
2 Tablespoons olive oil
1 Tablespoon butter
2 cloves garlic, minced
½ cup raisins
1 lemon, cut in half, juice

  1. Boil a large pot of water
  2. Add collards and half the salt
  3. Cook for 15 minutes
  4. Remove from heat, drain
  5. Plunge collards into a bowl of ice and water
  6. Remove after 3 minutes
  7. In a medium sauté pan, heat oil and butter
  8. Add garlic, cook for 1 minute
  9. Add collards, raisins, and salt
  10. Cook for 3 minutes, pour lemon juice in.
  11. Remove from heat, stir well, Enjoy!
