Zingy Scallops

1 lb Sea Scallops
1 Lemon
2 Tablespoon Oil
1 Tablespoon Butter
½ Red Onion
Salt & Pepper
1 Teaspoon Crushed Red Pepper

  1. Rinse scallops, let dry
  2. Heat oil & butter in skillet
  3. Place scallops in the pan, cook 3 minutes
  4. Turn over Scallops, add onion and seasonings
  5. Squeeze lemon juice over the scallops
  6. Simmer 3 minutes

Serve with fresh asparagus & tomato, couscous or rice
