Green Pepper and Sweet Corn Muffins

3 cups flour
1 cup corn meal
1/4 cup sugar
2 Tablespoons baking powder
3 eggs
½ lbs. butter
2 cups milk
1 cup fresh corn
½ cup green pepper
3 scallions
2 cups of cheddar cheese

  1. In a large bowl, mix the dry ingredients
  2. In a medium bowl, beat the eggs with the sugar
  3. Add the butter to the eggs, then mix in the dry ingredients
  4. Slowly add the milk, this should be a bit thick and crumbly
  5. Fold in the veggies and cheese
  6. Season with salt and pepper
  7. Bake at 350 for 30 minutes
