Chickpeas & Cuke Salad

3 medium cucumbers
2 cup chickpeas
1 large tomato
¼ of red onion
¼ cup olive oil
4 Tablespoons red wine vinegar
Salt & pepper

  1. Cut cucumbers into cubes
  2. Drain chickpeas from can
  3. Chop tomato
  4. Slice red onion
  5. Toss them in a large bowl
  6. In a small bowl, whisk oil, vinegar & seasonings

Pour over salad, let set for at least 1 hour
