1 cup fresh parsley
1 cup scallions
1 cup fresh mint
1 cup bulgar wheat
1/2 cup lemon juice
1/2 cup olive oil
In food processor, pulse the scallions
Add parsley, pulse
Add mint, pulse
In a large bowl place 1 cup wheat, top with water, rinse a few times, until water runs clear.
The wheat needs to set for a few minutes, until it is puffy.
Chop tomatoes, place in a bowl with the mint, parsley and scallions.
Pour oil, lemon juice and salt over salad
Take bowl of wheat and add it by the hand full to the salad.
