Pineapple & Coconut Salad
2 cups fresh pineapple, cubed
1 cucumber
1 cup baby spinach
1 cup watercress
1 cup plain yogurt
½ lemon, juiced
2 teaspoons mint
¾ cup toasted coconut flakes
- Place spinach and watercress on a platter
- Dice cucumber, half of it goes on the greens
- Arrange pineapple on top of the greens
- In a medium bowl, gently stir lemon juice and yogurt
- Add remaining cucumber and mint, stir
- Pour over salad
- Sprinkle with toasted coconut
