Pineapple & Coconut Salad

2 cups fresh pineapple, cubed
1 cucumber
1 cup baby spinach
1 cup watercress
1 cup plain yogurt
½ lemon, juiced
2 teaspoons mint
¾ cup toasted coconut flakes

  • Place spinach and watercress on a platter
  • Dice cucumber, half of it goes on the greens
  • Arrange pineapple on top of the greens
  • In a medium bowl, gently stir lemon juice and yogurt
  • Add remaining cucumber and mint, stir
  • Pour over salad
  • Sprinkle with toasted coconut
