Split Pea Soup
2 Tablespoons butter
1 medium onion
4 stalks celery
2 carrots
¼ teaspoon black pepper
3 Bay leaves
¼ teaspoon thyme
1 ¼ cup dried split peas
3 cups water
2 cups chicken stock
1 ham bone
- In a large pot, melt butter
- Add chopped veggies and seasonings
- Sauté for about 5 minutes
- Add water, chicken stock, and ham bone
- Bring to boil, add peas
- On medium boil, cook for 1 hour
- Stir often, add more water if needed
- Remove ham bone and bay leaves before serving
This should be very thick, if you want you can put soup into blender to make smooth and creamy.
