Split Pea Soup

2 Tablespoons butter
1 medium onion
4 stalks celery
2 carrots
¼ teaspoon black pepper
3 Bay leaves
¼ teaspoon thyme
1 ¼ cup dried split peas
3 cups water
2 cups chicken stock
1 ham bone

  1. In a large pot, melt butter
  2. Add chopped veggies and seasonings
  3. Sauté  for about 5 minutes
  4. Add water, chicken stock, and ham bone
  5. Bring to boil, add peas
  6. On medium boil, cook for 1 hour
  7. Stir often, add more water if needed
  8. Remove ham bone and bay leaves before serving

This should be very thick, if you want you can put soup into blender to make smooth and creamy.
