Pumpkin Molasses Pancakes
1 ¾ cup flour
½ cup sugar
3 tablespoons baking powder
½ stick butter, melted
1 can pumpkin
1 egg
¼ cup molasses
1 tsp cinnamon
Dash of nutmeg, ginger, allspice
Mix, in order, the ingredients into a large bowl. Stir well. Spoon onto hot griddle. Cook until bubbles form, flip, cook for 30 – 60 seconds. Serve with favorite toppings.
