Potato Pancakes

2 potatoes

1 onion

2 eggs

1/4 cup flour

1/4 cup breadcrumbs

oil, to fry

1. Grate the potatoes and onion, and set in strainer

2. In a medium bowl, Mix eggs and flour

3. Add the grated veggies, season with salt & pepper if you like

4. In a small bowl, pour bread crumbs

5. Take a scoop of batter and coat with bread crumbs

6. Heat oil, fry each pancake for 5 minutes

7. Serve with apple butter, sour cream, or raspberry jam. Enjoy.
