Honey Lime Vinaigrette

Honey Lime Vinaigrette

⅓ cup honey

⅓ cup lime juice

¼ cup red onion, chopped

1 teaspoon crushed red pepper

¼ teaspoon salt

¼ cup cilantro, chopped

¾ cup olive oil

1 cup pistachios

  1. Process first six ingredients in blender
  2. Add oil while blender is running
  3. Add pistachios, pulse a few times

Melon & Spinach Salad

1 cantaloupe (or honeydew )

6 cups fresh spinach

½ cup pistachios

  1. Peel, seed, and cut cantaloupe into thin wedges
  2. Place spinach on individual plates; arrange melon on top
  3. Sprinkle pistachios over
  4. Drizzle with vinaigrette
