Apple, Bacon & Tomato Jam

½ pound bacon, cooked, crumbled into pieces

1 (28-ounce) can petite diced tomatoes, drained

1 cup sugar

1 tart cooking apple peeled and diced

1 small sweet onion, diced

3 tablespoons apple cider vinegar

1 teaspoons salt

¼ teaspoon ground black pepper

1 French baguette, cut into thin slices and toasted

4-6 ounces feta cheese

  1. In a medium pot, bring to boil tomatoes, vinegar and sugar
  2. Add onion, salt & pepper
  3. Add apple,and bacon, simmer 15 – 20 minutes
  4. Spoon onto toast points, add a little feta
