Broccoli Rabe

Short Braised Broccoli Rabe

1 bunch Broccoli Rabe
¼ cup Olive Oil
3 cloves Garlic
1 small Onion, sliced
1 teaspoon crushed red pepper flakes
2 teaspoons coarse salt
2 teaspoons lemon juice
½ cup white wine
½ cup broth

1.Heat oil in a large skillet, add onion and garlic stirring frequently
2.Add red pepper, salt and lemon juice, cook for 2 minutes
3.Toss broccoli rabe into the pan , coating well
4.Pour in wine and broth simmer 7 – 10 minutes
5.Serve over pasta or risotto, sprinkle with romano cheese
Try swapping out Broccoli Rabe for Swiss Chard, Spinach or Kale
