Okra Stew

16 oz frozen or fresh baby okra

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic

3 ribs celery, chopped

3 carrots, sliced

1 can diced tomatoes

2 tablespoons tomato paste

2-3 cups water

1/4 teaspoon ground nutmeg

1/2 teaspoon allspice

Dash of cinnamon

1 teaspoon red pepper

Salt and Pepper

  1. Heat oil, sauté onion for 3 minutes
  2. Add garlic, remove from heat
  3. Add spices and tomato paste
  4. Place back on medium heat, simmer 5 minutes
  5. Add remaining ingredients, slow boil for 15 minutes
  6. Reduce heat. The longer it stews, the thicker and more flavorful.
