Blackberry Chops

Blackberry Pork Chops

4 pork chops
Salt and black pepper
2 teaspoons paprika
¼ cup olive oil
1/4 teaspoon rosemary, or sage

Blackberry-ginger sauce:
2 cups blackberries
1 Tablespoon fresh ginger, grated
1 jalapeno, chopped
3 Tablespoons honey
1 Tablespoon balsamic vinegar
½ lemon, juiced
Salt and Pepper

  1. Place all the Sauce ingredients in a medium pot
  2. Heat to a boil, reduce to simmer for 10 minutes
  3. In a small bowl, whisk oil, herbs, paprika
  4. Salt and Pepper each chop, brush with oil mixture
  5. Heat a skillet, place chops in and cook for 5 minutes
  6. Turn chops, cook another 7 minutes
  7. Place chops on platter

Spoon sauce over the chops
