Pina Colada Bars

6 Tablespoons butter, melted
1 ½ cup graham crackers, crushed
16 ounces cream cheese
½ cup cream of coconut
2 teaspoons rum flavoring
1 cup crushed pineapple
1 cup cherries
1 cup whip cream
1 ½ cups coconut flakes, (toasted if you like)

  1. In a large bowl, mix graham crackers with butter
  2. Spread into a greased 9 x 13 baking dish
  3. Bake at 350 for 10 minutes
  4. In a large bowl, beat cream cheese with cream of coconut
  5. Add rum flavoring, mix
  6. Fold in the pineapple and cherries
  7. Fold in whip cream
  8. Spoon into crust
  9. Sprinkle coconut flakes over top, refrigerate for 3 hours
