Pina Colada Bars
6 Tablespoons butter, melted
1 ½ cup graham crackers, crushed
16 ounces cream cheese
½ cup cream of coconut
2 teaspoons rum flavoring
1 cup crushed pineapple
1 cup cherries
1 cup whip cream
1 ½ cups coconut flakes, (toasted if you like)
- In a large bowl, mix graham crackers with butter
- Spread into a greased 9 x 13 baking dish
- Bake at 350 for 10 minutes
- In a large bowl, beat cream cheese with cream of coconut
- Add rum flavoring, mix
- Fold in the pineapple and cherries
- Fold in whip cream
- Spoon into crust
- Sprinkle coconut flakes over top, refrigerate for 3 hours
