Splash of Lemon

lemon ice

Simple. Sweet. Soul Satisfying ! Remember those long summer days, and how it would be a treat to go to the amusement park? This refreshing shaved ice recreates that feeling & cools off even the hottest of afternoons.
For certain, my competitive side comes from my family. As kids, my brother would challenge me to out do him on all the rides at the amusement park. I knew his weakness was fried clams, and he knew mine was fried dough & the Tilt – A – Whirl. Aah, yes the things that build character. I learned how to adapt, how to prepare, and most importantly how to appreciate ones opponent.
My brother has tremendous admiration for me, for a couple reasons. My ability to endure , which I think comes from those childhood days ( funny, it never crossed my mind to quit in the middle of the competition) And he admires me because of the way I handle things, no matter how serious the matter at hand is, somehow I add a smile & a splash of joy.

This recipe is easy; 4 cups of crushed ice, 2 cups fresh lemon juice, 1 1/2 cups sugar
Mix well, then place in a baking dish, freeze for 3 hours
Remove from freezer, shave ice & place in scooped out lemons
