Just in time, my friend Kimberly inspired this delicious dish ! It’s got spunk, it’s got style, and it’s very much just like her….full of surprises. This is no ordinary cinco de mayo chicken dinner, much like Kimberly – it is creative. She is the go to gal around town for events & a splash of fun.
I for one, took her suggestion & did just what she does so well, I adapted. Here is the step by step version;
Steam mushrooms & asparagus 5 minutes. Add spinach, steam additional 5 minutes
In a medium bowl, stir 1/2 cup ricotta cheese with chopped jalapeno. then stir in steamed veggies.
Place a spoonful on to each chicken, roll them up. Then roll through panko breadcrumbs.
In a hot skillet with 2 Tablespoons butter & 2 Tablespoons olive oil, brown on all sides. I then added 1/2 cup chicken broth and simmered 8 minutes. You can adjust this part with white wine, or a splash of lime juice.
