Cranberry & Pecan Salmon

Crazy Cranberries appear here, there and everywhere. This lovely dish goes formal; add a side of rice pilaf, roasted brussels sprouts and dessert ( of course ) It can go casual; A plate full of winter greens, shredded cabbage, goat cheese, fresh pears, and place a few slices of salmon atop.
Shocker…I swap out the fish for chicken or pork.

2 cups whole cranberries
1/2 cup brown sugar
1 tablespoon fresh ginger
1 leek, clean well and cut in rings
2 tablespoons Butter
1/2 cup chopped pecans
1 lb. salmon
