Sea Scallops & what? Spinach maybe, or linguini, how about wild rice!! These delicate treats from the Sea are surprisingly easy to make.
Using clarified butter, a little white wine, and salt & pepper it takes 7 minutes from pan to plate. You could dress them up with a glaze or fresh herbs if your mood calls for it. To clarify butter;
In a small pot, slowly melt 1/2 stick of unsalted butter.
Remove the foam, by skimming the top.
Use the clarified butter in sauces, or searing fish
This recipe is classic;
In a hot skillet, add 2 tablespoons clarified butter
Rinse Sea Scallops, pat dry, season with salt & pepper
Set them into your skillet, cook on medium high 2 minutes
Turn each one over, cook another 2 minutes
Add 1/4 cup white wine, squeeze a lemon over them, cook on lower heat 1 – 2 minutes
Serve with your spinach or wild rice, and enjoy the time with your dinner guests!
