A power house of flavor and nutrition made simple. Really, it takes a few minutes to toss these ingredients together, keeping the evening stress free!
Sometimes fancy and complicated is needed, and sometimes we need a break for clean, fresh, simple flavors.
2 Tablespoons of olive oil
2 Tablespoons of butter
2 filets of cod
Salt & pepper
1 cup of cherry tomatoes
2 cups fresh spinach
Heat the oil & butter
Salt & pepper the fish, place in the pan, cook each side 2 minutes
Remove fish, place in baking dish, heat in oven for 5-6 minutes
In the skillet, add tomatoes, spinach and lemon juice
Cook for 5 minutes.
On a platter, spoon couscous, veggies, and fish
Crumble blue cheese on top.
