St. Paddy’s day is more than just corn beef and cabbage. Dare to be different, is my motto.
There are several versions of this dish, the ones served with sour cream, the other with ketchup, and even one with vinegar. It took an adventure and one dear friend for me to even try eating potato pancakes.
Everyone should be so lucky to have that side-kick friend throughout life. You know the Bert and Ernie, the Fred and Ginger type of friendship. Me and Lucy ( she is younger, so I get the headline ) went on a road trip to upstate New York to visit her birthplace.
