Pork Chop and Apple Raspberry Salad for a quick midweek meal. This is one of those no fuss dishes, you can easily swap out my glaze for the pork with a raspberry preserve, or an apple butter & add a splash of vinegar.

The watercress salad with a few slices of apple is simply tossed with a few raspberries and 1/4 cup olive oil plus 1/2 of lemon squeezed over the top. If you like to get fancy, fresh scallions or a dash of crushed red pepper- just to spice it up.

The pork Chops go in the oven with a glaze for 20 minutes. My glaze; 1/2 cup raspberries, 3 Tablespoons of apple cider vinegar, 1/2 teaspoon oregano, 2 Tablespoons melted butter. Squish it all together either in blender, food processor, or with an ole fashion potato masher!
