Ha! Not your mama’s leftovers. A simple way to redesign the turkey dinner. You can freeze these, and take them out for the cold winter evenings mid January.
My grandpa was a regular at our local dinner, he and a few of his card playing buddies. They would be thrilled when I came bopping in with my friends after a football game, or late night after concert in town. It gave the guys a chance to spoil us teenagers.
They told story after story, we ate plate after plate. These croquettes were my favorite!
All you need is leftover turkey, potato or stuffing, place in blender , pulse a few times.
If there is no gravy, use milk and flour – heat with chicken stock
Stir in the turkey, then roll through breadcrumbs.
Fry in a little hot oil…serve or freeze.
