I need some veggies in my life! Chatting with my neighbor over the very passive aggressive weather we have had here this week, he asked what I was making for dinner. We often swap stories, dinner ideas, and what events are happening around town.
We giggled over the idea that family holiday meals vary dramatically, depending on what part of the country you grow up in. The one common thread, everyone seems to over look the veggies!! I have a solution for that; These beauties are easy and elegant. Mix it up, use cinnamon, or cloves, a dash of nutmeg and a splash of white wine…go on permission to play with your food.
Cut squash in half, scoop out seeds
Place in baking dish, add 1/2 cup water
In a bowl, whisk 1/4 cup molasses and 4 Tablespoons melted butter
Add seasonings of your choice, pour over squash
Bake at 350 for 45 minutes
