My version of Chicken Verde came as a happy accident one evening. We had just gotten back into town, as I was browning up the chicken to make dinner a few neighbors dropped in to catch up on all the news.
Kim brought along salsa and chips, Sam brought the makings for margaritas, and the laughter began. I rather spend time sitting and sharing stories of our adventures, than to be standing at the stove. I did what any creative cook would, opened the jar of salsa poured some in a bowl, put the rest over the chicken, turned the heat down and enjoyed my company.
