Spice Cake & Apple Butter

Ha! Cake for breakfast. Fabulous, simple, scrumptious. While living in Maine, I was introduced to Apple Butter. It may just be that the crisp New England air lends itself to adding an intense flavor to local apples, or just my memory of those afternoons are sweeter. Whatever the reason, I adore apple season.

  • 3 ¾ cups all-purpose flour
  • 1 cup sugar
  • ½ teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 ½ teaspoons fine sea salt
  • 3 teaspoons cinnamon
  • 2 teaspoons allspice or mace
  • 1 teaspoon freshly grated nutmeg
  • 4 eggs
  • 3 cups apple butter or applesauce
  • ¾ cup vegetable oilCream Cheese Frosting:
    • 1 cup (8 oz) cream cheese
    • ½ cup (1 stick) butter
    • ¼ teaspoon fine sea salt
    • 2 lb confectioners’ sugar
    • 2 tablespoons vanilla extract
    • 2 to 4 tablespoons heavy cream
