Yes, you can make quite a statement when you serve your guest this elegant meal. I’ll let you in on a little gypsy wisdom; serve it to your family for dinner, they too need to feel as if you went out of your way to make something elegant just for them.

4 medallions of tenderloin beef
2Tbl butter
2Tbl oil
Salt & Pepper
 Glaze;
2 Tbl scallions
1 cup wine, red or Madeira
¼ cup beef broth
2 Tbl butter

1.Salt & pepper beef
2.heat butter and oil
3.add beef to pan, brown each side,3mins
4.remove the beef
5.pour out fat, leaving 1 Tbl in pan
6.add scallions
7.turn up heat, add wine
8.add stock
9.turn heat to med boil
10.reduce to a syrup
11.add 1 Tbl butter, when it is melted add the remaining
12.pour over beef
