Oh My! Bacon Muffins

Yes, it’s a party in your mouth! Bacon has reinvented itself, again. For the longest time I was resisting adding bacon where it did not belong. Silly me. I have sense taken the Gypsy Soup motto, ” stir up some fun ” and whoa-la…scrumptious. Try it with Banana Muffins, or;

Carrot Muffins
2-3 carrots
½ cup nuts
1 apple
2 cups flour
1 ¼ cup sugar
¾ tsp baking soda
1 ½ tsp baking powder
½ tsp salt
1 tsp cinnamon
3 eggs
¾ cup oil
1 tsp vanilla

  1. mix flour, sugar, baking soda, baking powder, salt, and cinnamon
  2. in a separate bowl mix eggs, oil, and vanilla
  3. grate the carrot and the apple
  4. mix the egg into flour ( don’t make soup!)
  5. gently stir in the carrots, apple and nuts
  6. bake  at 350 for 15 mins
  7. Topping; Butter Cream Frosting with Chocolate covered Bacon pieces

you may want to substitute ½ molasses ½ sugar
