Sassy Tomato Bisque

lobster bisque

Living in a seaside town for a couple summer’s gave me the chance to experiment with a variety of things. It also taught me to use everything in the kitchen, back then we didn’t throw out left overs, we added some sassy style to them.

  • 3 tablespoons butter
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons flour
  • 5 cups chicken stock
  • 3 cups fresh tomato, chopped
  • 3 parsley sprigs
  • 3 fresh thyme sprigs
  • 2 bay leaves
  • 1 cup heavy cream, warm
  • 3 Tablespoons sherry
  • Freshly ground black pepper
  • Chunks of lobster, or shrimp, or scallops
