Stuffed French Toast

I adore the children that attend my cooking camps, they get so creative. They had the task of figuring out how to compromise with eggs, cream cheese, a loaf of bread, and some jam. Some debate over  ‘we want scrambled eggs,’ ‘ no! over easy’, ‘no! hard boiled’ – was ended when I informed them I was not a short order cook today, and they had to clean up ALL the pans they use.  Their full recipe can be found by clicking on the breakfast tab under recipes.

about 2 tablespoons butter, softened (for pan)
1 very large loaf of challah bread
8 large eggs
3 cups whole milk
½ cup sugar
1 tablespoon vanilla extract
1 teaspoon cinnamon
couple pinches of salt
1 8-ounce package of cream cheese, softened
1 cup strawberry jam
