Rosemary Butter Chicken

Working from home, leaves me out of the loop at the water cooler. So instead, I catch up on the news in the hood, as my neighbor and I would hang by the Rosemary bush that borders our property. We swap stories about living in different parts of the country, our adventures thus far in life. He always has a bit of wisdom to offer, and I gladly take it. Along with a handful of Rosemary, I learn of the healing properties of this magnificent herb.
Rosemary; to improve memory, relieve muscle pain and spasm, stimulate hair growth, and support the circulatory and nervous systems.

Garlic Butter Chicken
½ cup butter
¼ cup fresh rosemary
2 cloves garlic
¼ cup lemon juice
Salt & Pepper
¼ cup olive oil
6 pieces of chicken

  1. In a food processor, blend together the butter, rosemary, garlic, lemon zest, and lemon juice. Remove ½ the mixture, set aside. Add oil to food processor, blend.
  2. Season chicken with salt & pepper. Place chicken in a baking dish, pour oil & butter mixture over chicken.Refrigerate 3 hours.
  3. Grill chicken, serve with a spoonful of the seasoned butter.
