Apple Chicken Sausage & Such

Sweet Summer Flavors for easy meal. Apple Chicken Sausage, Grilled Watermelon, & a Spinach-Swiss Chard Salad with Goat Cheese, Cranberries, and Toasted Almonds. Many years ago, my step-sister, Lynn introduced me to Swiss Chard. She had a garden full of these giant, bright leaves !
She also had a way of getting me into trying new things. One hot summer evening, while the eight kids were playing in the yard, she and I set to the kitchen to make dinner. Like magic, she tossed together all these wild combos of greens and proceeded to give me the duty of dressing them. Off to the grill she went with the sausage and watermelon. In a matter of minutes supper was served.
The kids devoured everything, it was delicious. Plus it was quick to make, giving us time to zip off to the Drive-In Movies. Over the years, we’ve had many adventures across the USA, exposing the kids to culture, history, new tastes, just learning about life as we go. Our favorite journeys, of course are being at home, in your own back yard, chasing fireflies with the cousins.

Summer Supper;
4 lbs of Apple Chicken Sausage
1 watermelon
Grill sausage, 20 minutes
Grill watermelon slices 2 minutes each side
Large bunch of Swiss Chard
1/2 cup cranberries
1/2 cup goat cheese
1/2 cup almonds
Toss these in a bowl with lemon juice, salt, pepper, and 1/4 teaspoon red pepper flakes plus 1/4 cup vinegar.
